Panino con cheddar e fichi


Cipolle caramellate

  • 2 cipolle gialle medie, tritate 
  • 45 ml (3 cucchiai) di olio di canola
  • 60 ml (2 cucchiai) di aceto balsamico
  • 15 ml (1 cucchiaio) di sciroppo d'acero

Formaggio grigliato

  • 15 ml (1 cucchiaio) di burro ammorbidito
  • 4 fette di pane bianco
  • 15 ml (1 cucchiaio) di marmellata di fichi
  • 4 fette di formaggio Cheddar stagionato Cathedral City 


Caramelized Onions

  1. In a pot, caramelize the onions in oil for 15 to 20 minutes.    
  2. Add the balsamic vinegar and maple syrup. 
  3. Continue cooking for 2 to 3 minutes or until the mixture is syrupy. Add pepper to taste. 

Grilled Cheese

  1. Spread half the butter on one side of a slice of bread. Top the unbuttered side with fig jam, caramelized onions, and two slices of Cathedral City Mature Cheddar cheese. 
  2. Place the pieces of bread together and butter the outsides. 
  3. In a non-stick pan, cook the sandwich over medium heat for 3 minutes, or until golden, then flip it over. 
  4. Lightly press the top to flatten slightly. Cook until both sides are golden and the cheese is melted. 
  5. Let grilled cheese rest for 2 minutes. Cut in half diagonally and serve.
